Do you ever have leftover rice in the fridge? A great way to use it up is to make fried rice! Fried rice works best with chilled leftover rice actually. Fresh rice can fry up a bit mushy. But leftover rice that had a chance to dry out a bit? Perfect for frying.

Pretty much anything can go into fried rice—usually a combination of veggies, beaten egg, and a protein such as the shrimp we are using in this recipe, or chicken, fish, or tofu.

I’m getting ready for my summer bod.

With chicken parmesan.

And plenty of cheese.

I know.

It sounds too good to be true.

But don’t worry.

We’re subbing out the pasta.

And using spaghetti squash instead.

I know.

I’m kind of a genius.

Sumer 2017.

We’re ready for you.

Spaghetti Squash Chicken Parmesan

An amazingly healthier version of everyone’s favorite chicken parm without compromising taste. The best comfort food!

Ingredients:

  • 1 cup vegetable oil
  • 3/4 cup Italian style breadcrumbs
  • 1/4 cup freshly grated Parmesan
  • 2 boneless, skinless chicken breasts, cut crosswise in half
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley leaves

For the spaghetti squash

  • 1 (2-3 pounds) spaghetti squash
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper, to taste

Directions:

  1. Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Cut the squash in half lengthwise from stem to tail and scrape out the seeds. Drizzle with olive oil and season with salt and pepper, to taste.
  3. Place squash, cut-side down, onto the prepared baking dish. Place into oven and roast until tender, about 35-45 minutes.
  4. Remove from oven and let rest until cool enough to handle.
  5. Using a fork, scrape the flesh to create long strands.
  6. In a large bowl, combine breadcrumbs and Parmesan; set aside.
  7. Working one at a time, dredge chicken in flour, dip into eggs, then dredge in breadcrumbs mixture, pressing to coat.
  8. Add chicken to the skillet and cook until evenly golden and crispy, about 3-4 minutes. Transfer to a paper towel-lined plate. Let cool before dicing into bite-size pieces.
  9. Preheat oven to broil. Lightly oil a large oven-proof skillet or baking dish or coat with nonstick spray.
  10. Add spaghetti squash to the prepared skillet baking dish and layer with chicken; sprinkle with cheese.
  11. Place into oven and cook until melted and golden brown, about 2 minutes.
  12. Serve immediately, garnished with parsley, if desired.

Biryani is a beautiful, simple South Asian rice pilaf that’s easy to make at home. It’s typically served at celebrations in India, and my Indian friends here in the United States talk about this dish with such nostalgia.

You can make it with all kinds of meats (like goat or seafood!) or just vegetables. The rice is often golden with turmeric and studded with raisins and nuts.

Biryani can also be a fantastic weeknight meal since it’s made all in one pot and is ready in under an hour. Today, I’m sharing my version of biryani with chicken.

Chicken and White Bean Enchiladas with Creamy Salsa Verde

White beans, shredded chicken, green chiles, sour cream and cheese – need I say more?

White beans, shredded chicken, green chiles, sour cream and cheese – need I say more?

These have just the right amount of kick to them and hit the spot if you’re craving Mexican food. They are large filling (one enchilada is a perfect serving size) and go great with Mexican brown rice (or Mexican Cauliflower Rice for low-carb). The easiest way for me to make shredded chicken is in my crock pot. I let it cook all day while I’m away, then I come home and shred it and freeze the broth for other recipes. You can also use leftover rotisserie chicken.
