Apple Slab Pie
A slab pie, in my opinion, is the best way to serve dessert to a crowd. Instead of baking your pie in a round tin, as is traditional, it’s baked in one big sheet pan.
Cut into squares, everyone gets their own “slab” of pie!

Sous Vide Teriyaki Salmon

After cooking salmon sous vide, I am convinced that this is the only way that salmon — and all fish, really — should be cooked. Period. Full stop. Forever and ever. For reasons which will shortly become clear.
But perfectly cooked salmon isn’t the only thing this recipe has going for it. No, the other attraction is that this sous vide recipe makes an outstanding freezer meal.
Having a few of these teriyaki salmon fillets prepped in the freezer and ready to cook sous vide is a lifesaver on nights when other dinner plans go awry.

Our Weekend in The Thousand Islands and Adirondacks, NY
Lighthouses, castles, boating, farms and more – here’s a recap (and a video!) from an incredible 4-day weekend in The Thousand Islands and Lake Placid, NY! We crammed a lot in this short weekend and had such an amazing time, we plan on returning really soon, hopefully in the winter when everything is covered in a blanket of snow.

Applesauce
Nothing beats the taste of homemade applesauce, and it’s so easy to make! Every year, starting in mid summer with the Gravensteins, and through late fall with Granny Smiths and Fuji apples, my father processes dozens of batches of applesauce from apples picked from his trees.

Cheesy Spinach and Artichoke Pinwheels
Everyone’s favorite spinach and artichoke dip in these cheesy, creamy and warm roll ups!!! So good for GAME DAY!!!
Hi guys!
I’m still here in Italy.
Stuck with all the pasta. The pizza. The calzones.
Horrible, I know.
But.
Even with all the amazing cuisine here, my mind is elsewhere.
It’s on game day food, DUH.
I’m getting ready for our games back as we arrive midday on a Saturday.
So I’ll have these pinwheels ready first thing.
I use my favorite spinach and artichoke dip mixture.
Rolling them up in crescent rolls with an egg wash to make them golden brown.
Also.
Serve immediately.
You don’t want to miss out on the cheesy-creaminess.
It’s gold.

Shrimp and Artichoke Pasta
A friend of mine introduced me to this Shrimp and Artichoke Pasta recipe years ago and it has become one of my favorite dishes to make for a midweek meal.
Even though it looks like there’s a lot going on—shrimp, artichokes, peas, pesto, pasta—the whole dish can be made in the time it takes to cook the pasta!

Pumpkin Chocolate Chip Loaf
Confession: I am a late bloomer when it comes to my love for pumpkin.
My mom doesn’t really like pumpkin, so the only encounters that I had with it before adulthood were in the form of store-bought pumpkin pies in those crinkly aluminum tins topped with a dollop of partially frozen cool whip. Not exactly the tastiest introduction!

Stuffed Turkey Breasts with Butternut Squash and Figs
Stuffed Turkey Breasts with Butternut Squash and Figs is a wonderful One-Pan Fall dish. This is also Whole30 compliant as well as gluten-free, low-carb, keto and Paleo. Turkey tenderloins are stuffed with sauteed butternut squash, spinach and figs, a meal-in-one with savory and sweet flavors. Figs are seasonal, so if you can’t find them, you could use another fruit such as pears or even apples.

Sausage Rolls
When I had a houseful of teenagers to feed, I often made this version of pigs in a blanket: fresh sausages wrapped in dough from my local pizzeria, baked until golden and crusty. The kids loved them and when my parents joined us for dinner, they did too.
You have to have one recipe that is practically as easy as ordering pizza, after all. This is mine.
