Have you seen the news? It’s apparently -50 degrees windchill in Chicago right now.

I wish I was joking. Meanwhile, it was 69 degrees F here in LA today. How will Butters and I survive in the Windy City?

I mean, I’ve loaded up on parkas and electric blankets for myself and Butters. But I don’t know, guys. It’s going to be a dicey winter for us Californians.

But what I do know is this – have as much of this creamy tortellini soup as possible until the polar vortex passes.

That and all the crusty bread to sop up all this creamy goodness.

Oh, and the wine. That helps warm you up too, no?

Creamy Tortellini Soup

My favorite cozy weeknight soup made in just 30 min! It’s so stinking easy too. Loaded with tender tortellini, sausage and kale!

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casing removed
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 2 teaspoons Italian seasoning
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 4 cups chicken stock
  • 1 (8-ounce) can tomato sauce
  • 1 (9-ounce) package refrigerated three cheese tortellini
  • 1/2 bunch kale, stems removed and leaves chopped
  • 1/3 cup heavy cream
  • 3 tablespoons chopped fresh basil

Directions:

  1. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
  2. Stir in garlic, onion and Italian seasoning. Cook, stirring frequently, until onions have become translucent, about 2-3 minutes; season with salt and pepper, to taste.
  3. Whisk in flour until lightly browned, about 1 minute.
  4. Gradually whisk in chicken stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes.
  5. Stir in tortellini; cover and cook until tender, about 5-7 minutes.
  6. Stir in kale until wilted, about 1-2 minutes. Stir in heavy cream and basil until heated through, about 1 minute; season with salt and pepper, to taste.
  7. Serve immediately.

Ben texted one night, asking what we had for dinner when he got home from work. I joked and replied, “Butters’ famous chicken enchiladas”.

He quickly got home from work and sat down at the kitchen counter, ready to judge just how good these “famous enchiladas” actually were.

He took one bite and grew silent. Then kept eating. After about 5 minutes of silence, he put his fork down and said, “Babe, that is the best thing you have ever made.”

I looked at him and said, “Really? More so than the creamy red pepper shells?”

He said, “Yes, 10000x times yet.”

Now do I tell him that this is just one of my weeknight quick fixer-uppers or do I just keep that to myself?

I think I’ll keep it to myself. But even as a quick weeknight meal, these really may just be the best enchiladas ever! Using leftover rotisserie chicken and a quick, homemade enchilada sauce, it legit does not get any better (or quicker).

Plus, the leftovers taste even better the very next day.

Weeknight Chicken Enchiladas

Classic chicken and black bean enchiladas for those busy weeknights! Easy to assemble with a quick homemade enchilada sauce!

Ingredients:

  • 4 cups coarsely shredded rotisserie chicken
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup chopped fresh cilantro leaves
  • 1 (8-ounce) package shredded Mexican blend cheese, divided
  • 8 to 10 (8-inch) flour tortillas, warmed

For the enchilada sauce

  • 1 tablespoon canola oil
  • 1 medium sweet onion, chopped
  • 1 small poblano pepper, diced
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 cup chicken stock
  • 1 (15-ounce) can tomato sauce

Directions:

  1. Preheat oven to 375 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.
  2. To make the enchilada sauce, heat canola oil in a large skillet over medium heat. Add onion and poblano, and cook, stirring frequently, until tender, about 3-4 minutes. Stir in garlic, chili powder, cumin, paprika and oregano until fragrant, about 1 minute.
  3. Gradually whisk in chicken stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until slightly thickened, about 5 minutes.
  4. In a large bowl, combine chicken, black beans, cilantro and 1/2 cup enchilada sauce. Stir in 3/4 cup cheese.
  5. To assemble the enchiladas, lay tortilla on a flat surface and spoon 1/2-3/4 cups of the chicken mixture in the center. Roll the tortilla and place seam side down onto prepared baking dish. Repeat with remaining tortillas and chicken mixture. Top with remaining enchilada sauce and remaining cheese.
  6. Place into oven and bake until bubbly, about 25-30 minutes.
  7. Serve immediately.

Skinnytaste Meal Plan (January 28-February 3)

Hope everyone’s enjoying the weekend. I am back on Weight Watchers tracking everything I eat (I go back to tracking anytime I need to lose a few pounds, like after a vacation or the holidays) and I’ve been sharing my daily routing on Instagram stories, if you are interested you can follow along, here is my Instagram. It’s also a year since my Dad passed, so it’s fitting to add his Czech Crepes with Berries and Cream to the meal plan this week, I grew up making them with my Dad.

And if you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.

There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:

Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!

The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.

And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!

But this surf and turf dinner for two made in less than 30 minutes will make your night. It’s so good, you may get a proposal out of this.

I’m just saying. This garlic butter sauce has a lot of magic behind it.

Garlic Butter Steak and Scallops - SURF AND TURF made in less than 30 min! The steak + scallops are so perfectly cooked with the best garlic butter sauce!

Garlic Butter Steak and Scallops

SURF AND TURF made in less than 30 min! The steak + scallops are so perfectly cooked with the best garlic butter sauce!

Ingredients:

  • 2 (1 1/2 inch thick) beef tenderloin fillets (about 6 to 8 ounces)
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons unsalted butter, divided
  • 8-10 large sea scallops

For the garlic butter sauce

  • 3 cloves garlic, minced
  • 6 tablespoons unsalted butter, cubed
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • Kosher salt and freshly ground black pepper, to taste

Directions:

  1. Heat a 12-inch cast iron skillet over medium high heat for 8-10 minutes.
  2. Using paper towels, pat both sides of the steak dry; season with salt and pepper, to taste.
  3. Melt 2 tablespoons butter. Place the steaks in the middle of the skillet and cook until a dark crust has formed, about 4-6 minutes. Using tongs, flip, and cook for an additional 3-4 minutes, or until desired doneness; set aside, loosely covered.
  4. While the steak rests, wipe the skillet clean and melt remaining 1 tablespoon butter.
  5. Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
  6. Season scallops with salt and pepper, to taste. Working in batches, add scallops to the skillet in a single layer and cook, flipping once, until golden brown and translucent in the center, about 2-3 minutes per side. Set aside and keep warm.
  7. To make the garlic butter sauce, reduce heat to low; add garlic and cook, stirring frequently, until fragrant, about 1 minute. Stir in butter, parsley, chives, lemon juice and lemon zest; season with salt and pepper, to taste.
  8. Serve steak and scallops immediately with garlic butter sauce.

I’m not really sure why. I love all the recipes in the book – I do – but I make this at least once a week!

It doesn’t require too many ingredients and I can whip this up as quickly as 10 minutes on some nights. I cheat and use the Trader Joe’s 3-minute microwave jasmine rice on those days – but hey, we all got those shortcuts in the freezer, right?

Thai Basil Chicken Bowls

A 30-minute meal with less than 400 calories per serving? YES AND YES!!! It’s so quick to whip up, budget-friendly, and SO GOOD!

Ingredients:

  • 1 cup jasmine rice
  • 1/2 cup chicken stock
  • 3 tablespoons reduced sodium soy sauce
  • 1 tablespoon fish sauce
  • 1 1/2 tablespoons light brown sugar
  • 1 1/2 tablespoons unseasoned rice vinegar
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 1 red Thai chili pepper, thinly sliced
  • 1 1/4 pounds ground chicken breast
  • 1 1/2 cups packed fresh basil leaves

Directions:

  1. Cook rice according to package instructions; set aside.
  2. In a small bowl, whisk together chicken stock, soy sauce, fish sauce, brown sugar and vinegar; set aside.
  3. Heat vegetable oil in a large skillet over medium heat. Add garlic, shallots and chili pepper. Cook, stirring frequently, until fragrant, about 1-2 minutes.
  4. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
  5. Stir in stock mixture and cook, stirring constantly, until the sauce has thickened, about 2-3 minutes. Stir in basil until just wilted, about 30 seconds.
  6. Divide rice into bowls. Top with chicken mixture.*
  7. Serve immediately.

Notes:

*Refrigerate for up to 3-4 days. The bowls can be reheated in the microwave in 30-second intervals until heated through.
