We did it. We finally moved to the Midwest after 20 years of living in California.

It almost feels a bit surreal as we cope with the 22 degree weather. I mean, it was 65 degrees when we left LA!

But honestly, it feels like home. Except home is filled with 17 unopened boxes filled with my kitchen stuff.

So I need to unpack as fast as possible so I can never leave my Chicago house and instead, nest inside with my new electric blanket and the coziest homemade mac and cheese ever.

This is your classic mac and cheese – there are no surprises here and there’s no fuss at all. It’s simple, it’s quick, and it’s completely made from scratch.

It’s perfectly cheesy without being too gummy, and the crunchy tops are just to die for before you get into that creamy heaven underneath.

You can of course choose to bake these in individual ramekins to avoid any kind of sharing or you can dump the entire mixture into a 2-qt baking dish.

Either works. It’s just that sharing can be a bit difficult on this one.

Baked Mac and Cheese

Everyone’s favorite classic mac and cheese! Super simple, super easy and super quick. You’ll never want the boxed stuff ever again!

Ingredients:

  • 1/2 pound elbow pasta
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 2 (12-ounce) cans evaporated milk*
  • 12 ounces shredded extra-sharp cheddar cheese, about 3 cups, divided
  • 1/4 cup freshly grated Parmesan
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  3. Melt butter in a large skillet over medium high heat. Whisk in flour, paprika and onion powder until lightly browned, about 1 minute.
  4. Gradually whisk in evaporated milk until slightly thickened, about 4-5 minutes.
  5. Remove from heat. Stir in 2 cups cheddar cheese and Parmesan. Stir in pasta; season with salt and pepper, to taste.
  6. Divide pasta mixture into 5 (10-ounce) or 6 (8-ounce) ramekins or ovenproof bowls.* Place onto a baking sheet; sprinkle with remaining 1 cup cheddar cheese.
  7. Place into oven and bake until golden brown, about 20-25 minutes.
  8. Serve immediately, garnished with chives, if desired.

Notes:

*I do not recommend substituting milk as the sauce will break in the oven, and the consistency will vary quite a bit.

*If you do not have ramekins or ovenproof bowls, this can also be baked in a 2qt baking dish.

Guys. This beef and broccoli doesn’t get any easier. It just doesn’t.

It cooks on a sheet pan, which means less fuss and less dishes. It’s a win-win for all.

The steak is also incredibly juicy and flavorful while the broccoli is just perfectly crisp-tender.

The only hard part here is making the sauce, except you can easily do that on the stovetop while your beef and broccoli are cooking.

Told you.

It doesn’t get any easier, or quicker here.

Sheet Pan Beef and Broccoli

Say hello to the easiest beef and broccoli of your life! No fuss, less dishes, yet it’s 10000x better than take-out. Win-win!

Ingredients:

  • 1 cup basmati rice
  • 1 1/2 pounds New York strip steak, cut into 1-inch chunks
  • 3 tablespoons reduced sodium soy sauce, divided
  • 2 tablespoons plus 2 teaspoons brown sugar, divided
  • 2 heads broccoli, cut into florets*
  • 2 teaspoons toasted sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Directions:

  1. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside.
  2. Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  3. In a large bowl, combine steak, 1 tablespoon soy sauce and 2 teaspoons brown sugar. Place steak and broccoli in a single layer onto the prepared baking sheet.
  4. Place into oven and bake until steak is browned and broccoli is just tender, about 16-18 minutes.
  5. In a small saucepan over medium low heat, combine sesame oil, garlic, ginger, red pepper flakes, remaining 2 tablespoons soy sauce and remaining 2 tablespoons brown sugar. Bring to a boil; reduce heat and simmer, stirring constantly, until slightly thickened, about 2-3 minutes.
  6. Serve steak and broccoli immediately with rice, drizzled with soy sauce mixture and garnished with green onions and sesame seeds, if desired.

Notes:

*About 8 cups.

If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.

There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:

Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!

The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.

And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!

Guys, it’s really happening.

We move to Chicago in just 3 days! I’ve packed 17 boxes dedicated just for kitchen needs, which means I should be ready to make these pot pie soups in no time.

I mean, what else will Butters and I be doing in 0 degree weather? You know Butters is just too dainty to be walking the streets laced with ice and snow.

So you can count on us being on the couch, wrapped in all the electric blankets we can find, inhaling these biscuits one by one as we sop up all the creamy goodness of this soup.

It has all the best flavors of a chicken pot pie but in soup form, which I personally think is even better than pie form. Plus, the flaky mile high biscuits are everything here.

Now I should mention that each soup should be served with 1 biscuit per serving, but I will totally turn a blind eye if you plan to have 3-4 biscuits with your soup…

Since that’s what I just did last night.

Chicken Pot Pie Soup

Everyone’s favorite pot pie in soup form! Simple to make and so so cozy and comforting! Serve with warm biscuits for a complete meal!

Ingredients:

  • 5 tablespoons unsalted butter, divided
  • 1 1/4 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
  • Kosher salt and freshly ground black pepper, to taste
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 3 celery ribs, diced
  • 3 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 5 tablespoons all-purpose flour
  • 1/3 cup dry white wine
  • 4 cups chicken stock
  • 1 bay leaf
  • 1 cup fresh cut green beans
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 teaspoons white wine vinegar

Directions:

  1. Melt 1 tablespoon butter in a large stockpot or Dutch oven over medium high heat heat. Season chicken with salt and pepper, to taste. Add chicken to the stockpot and cook until golden, about 2-3 minutes; set aside.
  2. Reduce heat to medium; melt remaining 4 tablespoons butter. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in garlic and poultry seasoning until fragrant, about 1 minute.
  3. Whisk in flour until lightly browned, about 1 minute.
  4. Stir in wine, scraping any browned bits from the bottom of the stockpot.
  5. Stir in chicken stock and bay leaf. Bring to a boil; reduce heat and simmer until flavors have blended, about 10-12 minutes.
  6. Stir in green beans, heavy cream and chicken; simmer until green beans are tender and soup has thickened, about 3-4 minutes.
  7. Stir in parsley and vinegar; season with salt and pepper, to taste.
  8. Serve with Flaky Mile High Biscuits, if desired.

Is it wrong that I’ve been eating these potatoes as a main?

I know, they’re officially classified as the best ever side dish to complement any meal but I prefer it much more as a main dish.

You know, carb-loading on every count for my wedding next year.

I mean, these babies are so perfectly crispy on the outside and melt-in-your-mouth tender on the inside. Plus, the garlic and fresh herbs also gives it just enough flavor without overpowering your main entree.

But then again, if you’re like me, you won’t need a main dish.

Ingredients:

  • 1 1/2 pounds petite gold potatoes
  • 6 tablespoons extra-virgin olive oil, divided
  • Kosher salt and freshly ground black pepper, to taste
  • 1 1/2 tablespoons minced fresh basil leaves
  • 1 tablespoon minced fresh chives
  • 1 tablespoon minced fresh parsley leaves
  • 1 clove garlic, finely grated

Directions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Using a sharp knife, make crosswise cuts in each potato, about 1/8-inch apart, stopping about 1/4 inch from the bottom.
  3. Place potatoes in a single layer, cut side up, onto the prepared baking sheet. Drizzle with 2 tablespoons olive oil; season with salt and pepper, to taste.
  4. Place into oven and bake until tender and crisp, about 45-50 minutes.
  5. In a small bowl, combine remaining 4 tablespoons olive oil, basil, chives, parsley and garlic; season with salt and pepper, to taste.
  6. Serve potatoes immediately, drizzled with olive oil mixture.
