Skinnytaste Dinner Plan (Week 59). Gochujang Glazed Salmon, Enchiladas, Pollo Guisada… I added a few favorites to this week’s meal plan! Makes enough for leftovers if you want to freeze or pack leftovers for the week.

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Monday: Turmeric Roasted Cauliflower Soup
Tuesday: Enchiladas Verde (Green Enchiladas) with salad.
Wednesday: Sloppy Joe Baked Sweet Potatoes
Thursday: Pressure Cooker Stewed Chicken with Corn (Pollo Guisado con Maiz) over cauliflower rice.
Friday: Gochujang-Glazed Salmon with brown rice
Saturday: Dinner Out
Sunday: Orecchiette Pasta with Chicken Sausage and Broccoli
