Think of frittata as an Italian cousin to the French omelet, with a few notable differences.
Instead of folding the omelet around the filling as the French do, Italian frittatas mix the eggs and filling together from the start and then bake them together in one dish. It’s a little like an open-faced omelet that can feed the whole family!

This recipe is brought to you in partnership with ChefSteps. ChefSteps is offering Simply Recipes readers $20 off both the new edition of their Joule sous vide immersion circulator and their flagship Joule through Thursday, June 1, 2017 — go check it out!
It seems like a magic trick: take a cheap, tough cut of beef, like a top round roast or a chuck roast, cook it for twenty-four hours without peeking, and Abracadabra! Now it’s suddenly filet mignon.
But it’s not magic — this is sous vide cooking!
For the past few months, I’ve been playing around with Joule, an immersion circulator from ChefSteps used for sous vide cooking, and I have slowly found myself won over by this new way of cooking. Have you ever heard of sous vide cooking? Or tried it yourself?

These baked Turkey Enchilada Stuffed Poblanos Rellenos are stuffed with a flavorful ground turkey filling, topped with my homemade enchilada sauce and cheese. These are so much lighter than restaurant chile rellenos which are typically battered in egg and deep fried.

Sangria is one of those things that you hardly need a recipe for – or even a particularly good red wine!
I do have a few slight twists I like use for my own sangria recipe. I like to add berries, like blueberries, raspberries, or strawberries. While apples and oranges are more traditional, I find berries infuse more flavor and color into the wine.

Sometimes simple is best, and that’s definitely the case with these tender Glazed Donuts!
Lately, I have really been seeing some crazy donuts out there! All sorts of interesting toppings, piled high… sometimes there’s so much going on you can barely even tell it’s a donut! They all sound amazing and completely over the top, but I have to be honest: my favorite is just a simple glazed donut.

My dad pulled out a favorite recipe from his collection of decades old Food & Wine magazine to make and share with “the people on the website.”
A “discussion” then ensued between the rental units for at least half an hour along the lines of “What do you mean this is a favorite recipe? You always told me you didn’t like salmon.” “What are you talking about? I used to make this all the time.” “You’ve never made it in this house!…” and so on and so on.

This is hands down, The Best Enchilada Sauce Recipe ever. Once you try this, you’ll never buy canned again! If you love enchiladas as much as I do, then making homemade enchilada sauce from scratch is a must. You may be familiar with if you’ve made my chicken enchiladas. I make this so often, I thought it deserved it’s own post rather than linking to my enchilada recipe every time I use this sauce in a recipe.
A reader recently commented that using this homemade enchilada sauce made all the difference in their dish, and I agree. I have never cared for any of the canned sauces, so I usually whip up a big batch and freeze what I don’t use for future meals. Trust me, you will be making this sauce again and again!
Other than making enchiladas, here’s a few more ways I like to use enchilada sauce:

Save money and make your own meal prep boxes with everyone’s favorite peanut butter and jelly whole wheat sandwiches!
Who doesn’t love a PB&J?
Am I right?
And this one is not just for the kids.
There is something so satisfying about a really great PB&J (especially this whole wheat bread healthy version!).
Peanut butter, as with a lot of other nut butters, contains good heart healthy fats and essential oils that keep our skin healthy and glowing.
Blueberries are super rich in antioxidants. They can also ward off heart disease as they contain potassium, folate, fiber, Vitamin C, and Vitamin B6.
Strawberries have much the same benefits except they are super rich in Vitamin C and manganese.
Carrots and celery are rich in enzymes, vitamins and antioxidants.
As with most snack boxes, you can substitute with your favorite fruits/ingredients. I personally love adding raspberries and peaches to mine in the summer as well as grapes and kiwi!
For example if I make a peanut butter and grape jelly sandwich i will fill my snack box with red grapes to match.
I know, I’m super OCD!

My mother often made these brownies on the spur of the moment. She’d see a bunch of kids in the house, and an hour later, she’d offer all of us a treat. “Let’s have a bite of brownie!” she would announce, and proceed to hand out small, warm squares.
I have no doubt that this recipe came from the back of a box at some point, but I only have the small index card she wrote in her beautiful penmanship. It’s a simple formula: chocolate, butter, sugar, eggs, and flour, all stirred together in one pot.
